One Earth Hearts is a family owned and operated company that has been producing and distributing Fresh Hearts of Palm to the gourmet foodservice industry since 2001. One Earth Hearts began as an experiment to see if we could help in the fight against Slash and Burn Agriculture. We harvest our fresh hearts from the Pejibaye (Peach Palm), which is a multiple palm that, if cultivated correctly, can continually produce fresh hearts from the same palm for more than 20 years. Our mission is to promote the awareness and use of fresh hearts of palm in order to provide an alternative crop for small farmers in Costa Rica that are currently farming other destructive crops that contribute to the vicious cycle of Slash and Burn Agriculture. Besides their environmental and nutritional benefits, chefs love that our fresh hearts of palm are so much more versatile than those mushy canned hearts of palm that have been boiled and sealed up, soaking for months in salty brine. Our fresh hearts keep their light, firm texture no matter how you cook them and their subtle taste plays beautifully with any ingredients you combine them with.
