The Abbaspourrad lab at Cornell University comprises over 30 members with diverse research backgrounds. No challenge is too great, and our team continues to push the boundary of what we can do. Our past research includes projects in the fields of structural emulsions, development of encapsulation platforms, microfluidics, a gut-on-a-chip device, and surface chemistry. Our most recent publications can be found below. We have published over 50 manuscripts and filed more than 10 patents in the last year alone. If you cannot access one of these publications, please contact our Lab Manager, Philip Davidowsky, at pd393@cornell.edu.Publications:Quantitative comparison of adsorption and desorption of commonly used sweeteners in the oral cavityLink: https://doi.org/10.1016/j.foodchem.2018.07.221Encapsulation of copigmented anthocyanins within polysaccharide microcapsules built upon removable CaCO3 templatesLink: https://doi.org/10.1016/j.foodhyd.2018.05.036Distribution of oil solubilized β-carotene in stabilized locust bean gum powders for the delivery of orange colorant to food productsLink: https://doi.org/10.1016/j.foodhyd.2018.05.027
