What started as a way for mom Antonina (Tonya), to provide her kids with treats she could trust, turned into a thriving business. The recipe uses plenty of cinnamon and ginger and unsweetened crushed pineapple to create a moist flavorful cake that is topped with an old-fashioned cream cheese frosting. The response was so favorable to the carrot cupcake, Antonina's opened a dedicated certified gluten free bakery to create additional treats.When you can't use wheat to bake with, you need to combine several other ingredients to create the same end product. It was really important to Tonya that these baked goods were as good as their "gluten filled" counterparts and would have "kid appeal" to please her family. So after lots of testing and tasting, everyone agreed you couldn't tell they were gluten free.Antonina's Artisan Bakery now has 6 facilities across the US to meet the growing demand for Gluten Free baked goods.
