Mother Nature knows best and the role of researchers is to understand how it works. While preparing for their migration, geese have the ability to naturally store their energy in their livers, in the form of fat. Our research has shown that food energy can be stored in the body thanks to bacteria in our intestine: the intestinal flora, a contributor to our wellbeing. Aviwell researchers have applied this discovery to the goose to identify ferment that will result in a naturally fat foie gras. Thus, Aviwell is launching a new product that combines gustative qualities and ethical values. These values, dear to Aviwell, will be guaranteed across the whole procedure: from the centre of research, representing the real DNA of the company, to the breeding by partner goose farmers, to the final stage of direct marketing. The excellence of this new delicacy will unfold in a variety of new products, thanks to our R&D activities.
