Food Production - Cachi, Salta Province, Argentina
Our vineyards are located at 2500 masl, in Cachi, a small town in the Calchaqui valleys in Salta, Argentina. The climate is continental with 300 days of intense sunlight, almost no rainfall and very high diurnal range. We irrigate our vines with snow meltwater coming from the "Nevado de Cachi", a 6300 masl´s peak in the Andes.Up in the Andes, the temperature difference between day and night is around 20 ºC. This condition allows the grapes to ripen during daytime and retain acidity during nighttime achieving phenolic ripeness without losing freshness. This climate also is beneficial for the vineyard sanity. Because of the lack of humidity and the intense sunlight, our vineyard is less prone to the attack of pests and diseases. This allows us to treat our ungrafted vines with organic and biodynamic methods.We produce around 15000 bottles a year, all made from grapes obtained from our 3.5 Has single-vineyard. Malbec, Torrontes, Tannat, Merlot and Syrah are the main grape varieties our wines are made of. We harvest them by hand and in small crates and we ferment them in micro vinifications of 400 kg.
