This support is strongly focused on research opportunities related to the functionality of raw materials and ingredients, processing technologies and storage conditions eventually leading to incremental product and process improvements or development of innovative processes and products. Cacaolab has a small-scale experimental production facility to make cocoa, chocolate and confectionery products on a lab or pilot scale and has developed an extended analytical toolbox for cocoa- and chocolate-related research. In addition, the company provides training to cocoa, chocolate and confectionery producers worldwide.
