Cafe Canelé is a commercial bakery specializing in the delectable French pastry known as the canelé. This little bite of perfection is ubiquitous in France and the official pastry of the Bordeaux region. However popular it has been for 300 years in France, most Americans are sadly not acquainted. \\The canelé is shy as a unicorn in the U.S., rarely showing its deliciously caramelized face in bakery cases heaped high with great big tasteless scones and big, dense bagels. \\That's because the canelé - *each* canelé - takes a minimum of 24 hours to make. The ingredients are specific and high quality, the batter is a procedural rather than a recipe. It's a finicky artisanal product and we love the challenge of making it perfectly, every time. \\Our motto is do one thing, and do it really really really well. The canelé is what we do. Naturally, we add our American accent to it! We do the classic canelé, but we also have sweet flavors, savory flavors and seasonal flavors Wait til you taste the pumpkin, or the pancetta, pineappple & parmesan.\\We regularly fill orders of thousands at a time. Chances are if you hit a Bay Area Farmer's Market or an event at the Moscone Convention Center, you'll at least get a glimpse if not a taste of the canelé in all it's custardy-on-the-inside, caramelization-on-the-outside delicious glory. \\Our family bakery is located in South San Francisco.
