Food Production - Kalamazoo, Michigan, United States
70% of cacao comes from Ghana and the Ivory Coast where there are an estimated 3 million children involved in slave labor harvesting of cacao beans. My mission is to displace as many Big Chocolate bars with ethically sourced chocolate bars.I source cacao beans from farmers around the world and depending on where they are from, they taste different. Very similar to wine. Some taste like you would imagine and other taste so fruity that you would think I added fruit; but I don't. This is single origin chocolate.Farmers are paid 5 times the market rate for their cacao beans to help them better their lives and communities.I roast the beans, grind them in a granite refiner, temper, mold, and pack, all right here in Kalamazoo in 10 pound "nano" batches. There are only two ingredients in every bar: cacao beans and sugar. The sugar is sustainably produced and vegan. All my dark chocolate is dairy free. I keep the chocolate as pure as possible so you can taste the REAL flavor of cacao beans that can vary wildy from country to country.
