The diet of most Westerners is directly attributable to 2/3 of the country being overweight or obese. Our diets are supersized, loaded with fat, butter, salt and genetically modified food. Most advancement in food has been to make it grow faster and bigger, make it easier to prepare or to let it sit on a shelf forever without spoiling. Little has been done to the food supply to make our products healthier or taste better, unless you mean pumping it up with high fructose corn syrup to sweeten the flavor. In our nutrition book, we suggest an "Easternish" diet consisting of reduced consumption of meats from 30% to fewer than 10% of diet, 60-70% in fruits and vegetables with the remainder in whole grains, low fat dairy and healthy fats. We feel that it's in the best interests of chefs to cook their patrons a healthier cuisine, if not for their health, for the fact that they need these diners to keep coming back to stay in business. Cook the Right Foods contains over 300 recipes and besides lean meats, we also provides recipes for healthy salads, hearty soups, smoothie recipes and a wide assortment of fruit and vegetables. We have taken some popular unhealthy dishes and shown a healthier preparation option.
