Our winery is located in the Village of Gratallops, right in the heart of the DOQ Priorat, harmonising our objective in Clos Pachem, namely to produce great wines in a rigorous environmentally friendly fashion. While we choose to cultivate the land following a biodynamic and organic approach, in the cellar the sustainable architecture has been fundamental, hence the project has been entrusted to Harquitectes, the prestigious architectural studio from Barcelona. Land and cellar portray two sides of the same coin, a true reflection of our essence and our approach.Built with natural, elementary and durable materials, the building blends perfectly in the historic centre of Gratallops. An interior passageway, conceived both as a public space and a welcome area, encourages passers-by to enter and explore the cellar.In the central area of the project lies a grand, yet spectacularly austere vault for fermenting wine. Its thick walls and air chambers keep the building 100% naturally refrigerated and provide complete hydrothermal stability. In Clos Pachem we understand that there is no wine without soil, landscape or the loving hands that care for the vineyards.For this reason we apply to our plots organic and biodynamic farming methods, not only regarded as the best way to accomplish great wines, but also as a way of upholding the microcosm which embraces us.Since only live lands yield vibrant wines, we manually tender and harvest our Gratallops vineyards, in the heart of the DOQ Priorat, under the breath-taking presence of the Montsant mountain range and an infinite universe of hilltops.These are the values which we all share as team members in Clos Pachem. Values which allow us to give heed to the land, embrace the climate diversity while trying to yield thrilling wines, attune with the history of the Priorat, its people and a millennial winemaking tradition.
