The Craft Irish Whiskey Co. is proud to be the first and only Irish whiskey company to cask at 52% ABV. We add the water upfront to allow it time to interact with the barrel and whiskey throughout the ageing process. It's more expensive to do this but ensures a more flavourful, rich depth to our whiskeys.The rest of the industry follows the practice of casking between 63-69% ABV, and then when the whiskey is mature, it's generally around 50-58% ABV. Then, they dilute with water to bring it to its desired ABV of around 40-46% to go into the bottle. We take a different approach at Craft Irish Whiskey Co. We add all the water on day one, so when it's finished its maturation period many years into the future, what comes out of the barrel goes straight into the bottle at cask strength. This produces a far more flavourful whiskey with a richer mouthfeel. The whiskey is smoother and more viscous.We believe that whiskey can be exceptional when you put the right practices into place. Like a fine wine, we use specific techniques which produce a smaller yield, but a far more flavourful product.
