We became fed up with the high alcohol and extracted flavors of big wines that slowed us down the next day. We responded by developing and applying strict criteria that's yielded us amazing relationships with owner growers in Champagne who make clean-crafted wines with no regrets. In this way we enjoy them twice: when we taste and how we feel the next day. This trend is in its infancy here in the U.S. (organic wines are the fastest growing wine category), but already firmly established in France especially among the artisans wine producers. I'm spent my whole life between two cultures and countries that's helped me foster relationships and build the pipeline from the vineyard to the glass of everyone who takes responsibility for their healthy lifestyle.
