Pinot PerfectionistsWe follow a simple philosophy. David Family Pinots are released only when perfectedA simple but focused philosophy drives consistent, premium quality for every bottle of David Family wine: If we don't absolutely love it, we won't release it.You may have noticed there is no Pinot Noir from 2008. 2008 was a good year, but it did not meet the standard we pride ourselves on when crafting the perfect Pinot Noir. We stand behind our palates and we are serious about making sure our wine remains collectible and delicious.Tasted at least 3 times before releaseDavid Family Pinot Noir is barrel aged in French oak for 10-12 months. After the wine is bottled we taste the wine at 2 months, 6 months and 10 months to ensure we release it at its optimum time. This may mean the wine is bottle aged for an additional 12 – 24 months before it's released to market.Age worthyOur wines are meant to age. It's always hard to know the exact time but based on our previous vintages we estimate 6 – 8 years of cellaring will present new found beauty in the wine. We know, sometimes it's hard to wait that long!
