Azienda Agricola Spadafora cultivates all the vineyards in an area surrounding the cellar, using exclusively our own grapes that, at the right maturation grade, will be used to give birth to our wines. This is one of the most delicate and important duties we have since 1993, our first harvest.We cultivate the grapes according to the organic standards and starting from 2014 vintage we can use the well-known green leaf; the vinification is done without adding sulfur dioxide and using natural reagents exclusively. We also create our own yeasts, since we prepare a pied de cuve with the first grapes we harvest for the fermentation; once the process is active, we use them to inoculate the musts.This allow us to give our wines that unique scent, not coming from sulfur dioxide, but strongly related to the terroir. This premise is very important, since it can help you understand how much we do care about harvest and vinification, for us is the result and final sum of a year of hard work; also you can tell how much we care about customer satisfaction.Our green attitude doesn't ends here though: we use clean energies, light glasses to avoid too much environmental impact and bio corks, made out of sugar beet.Also, we like to preserve and refine our wines in the bottle, even if we know that nowadays the global marketforces high speed processes, we prefer to keep it natural and give wine an adequate time to express its maximum potential.Our spirit is to give birth to wines that really relate to GRAPE, that reflect the land where they grew and that th vinification may always be clean and natural; this way we can always guarantee a unique and unconventional product.
