Here at Deli Farm Charcuterie we specialise in producing award winning air dried salami & hams; we are using the traditional Italian methods combined with modern technology to create perfect climatic conditions for drying and maturing. All our recipes have been carefully developed by ourselves, some are very traditional and some with a bit of an unusual twist. The pork we use is sourced from a family run farm 25 miles away from us; most of the cereals grown on the farm are made into specially formulated rations for the pigs.By using the prime cuts of meat, our salami do not have the chewy textures that you get from similar products made with the cheaper joints, it does make it more expensive but we are proud of what we are making and what we have achieved and are not prepared to sacrifice the quality for cost.
