East Parker Coffee Co. opened its doors summer of 2017 to the warm and welcoming Aledo community. Susan and Chris Demers, 16+ year Aledo residents, saw that their community desperately needed a unique space for residents to come together over hot brews and delicious home-cooked meals. Chris, a full time firefighter, has always had a love for coffee. On his days off, he could be seen frequenting the Holy Grounds shop off of 1187. When in mid-2017 it was announced his favorite spot was closing down, he decided to take the leap of reviving the business and making it his own. Enter East Parker Coffee Co., a manifestation of his dream just for Aledo.Now, East Parker Coffee Co. has blossomed into a true staple for the community, hosting monthly events such as student night and Aledo's first ever Open Mic nights. When asked what goes into the success of running a small business, Susan Demers says that, "We rely heavily on the support of the community we are so fortunate to call our home." East Parker Coffee Co. has expanded in their time open from coffee and pastries into a full kitchen, crafting sandwiches and homemade soups during the lunch hours and sporting diverse breakfast options, from waffles to breakfast burritos, until 10:30 a.m.
