Fianco a Fianco hand crafts sweet-savory cheese cookies for pairing with wine, coffee, tea, or gelato. Side by side, these innovative flavors blossom.Currently based in Fort Worth, Texas, I began making my sweet-savory cookies in 2010 while living just outside Genova, Italy. My husband's job brought two bustling New Yorkers to this idyllic seaside clime, and we found that our time in the kitchen, incorporating fresh and local Ligurian flavors into our meals, helped us adapt to a much slower pace of life along the Mediterranean. After lapping up plates of basil pesto at every opportunity, I embarked on an experiment, colliding that pesto essence with classic baking techniques. Many test batches later, a pesto-inspired cookie emerged from the oven. Within my biscottini al pesto, the building blocks of true genovese pesto—basil, traditional cheeses, extra-virgin olive oil, and pinoli nuts— intertwine on the palate with a sweet cookie crunch, culminating in the perfect, sharp blend of tangy–sweet indulgence. Once we returned to the United States, Fianco a Fianco blossomed and now boasts 9 additional flavors, all featuring a different cheese. Side by side, fianco a fianco, is the way all 10 varieties are meant to be enjoyed, paired with your favorite wine, beer, espresso, or tea. I take pride in my handcrafted treats and enjoy sharing them with each new community of culinary adventurers I encounter.
