The success of Little Anita's then paved the road for Foods of New Mexico, a prepared food production company founded in 1987 that produces ready-to-eat New Mexican food items both for retail and food service.Foods of New Mexico's line of products continues to provide the recipes that have been handed down through generations of families.Foods of New Mexico Distributors operates under the US Department of Agriculture Federal regulations. NMFD is HACCP compliant and practices programs such as SSOP (Sanitation Standard Operating Procedures), GMP (Good Manufacturing Practices), and is continuously improving on Quality Assurance Programs. NMFD has a quality assurance/micro laboratory on manufacturing safe, quality, wholesome food products.NMFD is inspected by the Food and Drug Administration and the Bernalillo County Health Department. We are staffed with a trained QC Technician who monitors and tests all of our products, we live up to the accountability of high standards for all of our products."New Mexico has all the necessary ingredients for growing great chiles in abundance with delicious flavor: the optimum climate and enough rain."Foods of New Mexico products are complete farm crop-to-package integration and nationwide distribution network allows us to consistently deliver the highest quality foods with the greatest reliability standards in the food industry.The most common chile in the New Mexican pod-type is divided into three categories: green chiles, red chiles, and paprika. The New Mexican green and red chile represents two developmental stages of the same fruit. The plant first produces green fruits, which turn red if the pods are left on the plant. The red fruits are usually dried and ground into chile powder (paprika non-pungent). New Mexican green chile is roasted and peeled for fresh consumption, canning or freezing. The flavor of the green chile is completely different from the red chile beaches the pods are picked at a different ripening stage.
