When we opened in 2011, our mission was simple: sustainably make real food using real ingredients. Today, we further that commitment by joining a movement of agricultural, and restaurant-industry folks who are pulling back the curtain on one of civilizations most fundamental ingredients...wheat! After learning and tasting all we could about what is considered the original superfood, we experienced our own enlightenment and realized it was time to blaze a new trail. Bypassing vendors, industrial mills, and commercial factories, we partnered directly with an organic farm to grow organic wheat that we would then mill ourselves...we would make our own flour! Doubting Thomas Farm is our hallowed farm partner, using 5 generations of organic farming knowledge to expertly nourish and tend to our wheat crop. They then harvest, clean, and ship wheat to us and we use our beautiful 40" New American Stone Mill to grind our organic wheat berries into flour everyday. Stone-ground one day, used the next...no factory in between bleaching, bromating, enriching, or otherwise "improving" our primary ingredient. We've been on a delicious, fulfilling, nourishing, enlightening wheat journey...what a pleasure it is for us share and serve you this delicious enlightenment!
