With the formation of Guy du Vin in 2000, David began his own venture focusing on improving the wine programs of both local restaurants and national chains. By working closely with the management, chef and staff, David creates a program with the "Guy du Vin" touch but with a strong focus on the business objectives of the restaurant – whether it means creating a unique list not to be found anywhere else or developing a core list for a national chain that reflects the food, while reducing costs and simplifying wine list management.
