We are located in the south of Spain, Málaga, and all our oil comes from olives which we have harvested ourselves. Centuries-old olive trees disappear over the horizon, dominating the scenery at the Hacienda de Colchado estate, where they have been growing olive trees and producing olive oil for more than three generations. Nowadays, it is a modern business which produces extra virgin olive oil of the highest quality, under its brand names Legado, Experience and Malaca Vetus. With many awards to the quality of our oils in Japan, EE.UU. and Israel.The milling process is carried out in the two hours after collection, always using a cold extraction method at temperatures below 20ºC, with short blending times.In the case of the Legado range, we only use olives of the Hojiblanca varietal. These are harvested early, in the middle of October when the olive acquires a yellow hue. At this stage of maturation the amount of oil that is obtained is very small; however, its quality from the sensory and chemical point of view is immense.The Experience range is a Hojiblanca monovarietal, selected during the months of November and December, when the olive has a color between green and red. In the oil obtained the green and ripe tones are mixed, showing a great balance both in the nose and in the mouth, which makes it ideal for all types of palates. Malaca Vetus range is an extra virgin olive oil of ripe olive, with a predominance of Hojiblanca variety, very subtle in the nose, where the mature nuances predominate, and extremely sweet in the mouth.
