At Kaizen Food Rescue, our mission is to prevent food wastage, shift systems that have posed challenges and inequities for our community, and improve food justice and health equity in the Denver Metro area. The non-profit organization was founded in 2019 by Thai Nguyen, a refugee with the premise of helping other refugees and families in need. The groundwork of "Kaizen Food Rescue" was laid and projected due to the kindness shown to her from Doctors Without Borders and many others in refugee camps before finally making it to the states. She understands the needs of the people, especially when it comes to food, and doesn't discriminate. Kaizen Food Rescue believes that healthy and culturally relevant food should be accessible to all, and our approach is to create continuous improvement surrounding food security and food justice in the Denver Metro area. In 2021, Kaizen Food Rescue redistributed nearly 5 million pounds of healthy food to thousands of families and reduced 4,017,631.41 emissions of CO2-e or equivalent 982.79 years of electricity consumption for one household.
