More than 200 years ago, at the country estate of La Amarilla, near Ronda (Andalucía), an order of nuns began producing olive oil from the fruit of century-old trees. The oil from these groves, situated just outside one of the most beautiful and emblematic cities of Andalucía and Spain, has always been famous locally for its exceptional quality. The Gómez de Baeza family, current owners of La Amarilla, made the decision both to keep up the estate's oil-making tradition and to begin selling its legendary oil for the first time. LA Organic was born in the 1990s. As sales increased and olive oil production at La Amarilla became insufficient, LA Organic took as its model the system of pagos asociados, common in the world of wine but unusual in the olive-oil sector. This system is a uniquely flexible one, giving the company control both over quantity and quality. Among LA Organic's shareholders are some of the biggest names in the organic olive oil business, such as José Cano (Antonio Cano e Hijos), Francisco Serrano (Almazaras de la Subbética), César Colliga and Maximiliano Arteaga. Together the partners are responsible for blending the oils from the company's 56 different pagos asociados to create LA's exceptional range of extra virgin organic olive oils. Michel Rolland, one of the world's most famous oenologists, is an LA Organic shareholder and blending consultant who brings to bear on these fine olive oils his 40-year experience in the world of wine. Philippe Starck, is an internationally acclaimed French creator, designer and architect. He is the company's Artistic Director and has created the brand identity of LA Organic oils, as well as other products in the LA range.
