Modern Baker develops breakthrough ‘clean label' ingredient technologies to improve the nutritional profile of carbohydrate-based ultra-processed foods, for the common good. The company formed as a response to the glaring fact that poor diet now stands alongside climate change as one of humanity's most greatest challenges.The working vision from the outset was to deconstruct the vegetable - universally lauded for unique nutritional impact, yet still widely resisted - and reconstruct its beneficial properties into scalable staple foods with mainstream appeal. The Modern Baker mission is to aid the transformation of the global food system by creating better ways to make the most commonly eaten foods systemically healthier. The focus to date has been bread and baked goods, a global market of $500B and in perpetual growth. Modern Baker has also created the consumer products and brands that define their brand new food category – Active Health Food. Of the ~1B loaves of bread produced globally every day, over 70% constitute an Ultra-Processed Food, a major contributor to the global epidemic of diet-related chronic illness, an ongoing crisis that's crippling global healthcare systems to the tune of trillions, while blighting lives and communities. There is another way. May 2021 saw the launch of the democratising SUPERLOAF, in collaboration with Amazon Fresh in the UK. SUPERLOAF is the healthiest loaf ever made, slowing glucose absorption, reducing calorie load and optimising gut microbiome activity – all of which contribute to supporting the human body's immune system. Based in Oxford, UK, Modern Baker was founded in 2017 by Melissa Sharp and Leo Campbell, following Melissa's food-epiphany on a chemo-ward. Five years of lab research have been backed by five funding awards from the UK's innovation agency, alongside private investment.The company will be raising further funds in Q1 2022.
