New Gluten World (NGW) is a startup founded by the University of Foggia, Molino Casillo SpA (a world leader in the transformation of grain), and the lead inventor and scientist Carmen Lamacchia. At the core of our research is the gluten-friendly technology that reshapes gluten proteins inside cereals. The methodology is patent protected in 105 countries worldwide. Our mission is to break down the nutritional divide that discriminates against people with celiac disease (a serious autoimmune condition) and people with gluten sensitivity. We want to equip milling companies and producers worldwide, with our proprietary technology and know-how to offer a new and safe gluten to everyone.
