Niche Restaurant was founded by Chef Jeremy Lycan following the closing of the acclaimed restaurant 302 West in April of 2006. Lycan along with thirteen former employees of the restaurant met just days after the closing to discuss the opportunity of working together again. The staff realized that their working relationships and environment were too unique to leave as a memory.The dedication and passion that they all shared for the dining experience had been fostered for many years at their previous restaurant under the tutelage of Chef / Owner Joel Findlay. It was this ideal that bonded the staff together as they worked so closely together and forged the dream of serving high quality food and wine in a new location.They were fortunate to get the opportunity to work closely with their investors, architect, interior designer and contractors to design and reconstruct the dining room that mirrored the concept in their minds.After many years of working closely together, the staff developed a deep passion and strong belief in the values which are carried into the dining experience at Niche Restaurant that include: * serving only the freshest produce, seafood, meats and cheeses * a static menu doesn't encompass the best the season has to offer and a constantly evolving menu allows for creativity and flexibility. * wine is a complement to the meal * American wineries are producing wine at the same level as the rest of the world and a list focused on these wineries exemplifies this point * the dining room is the canvas, the background to an excellent dining experience, not intrusive but soothing * the highest level of well trained and informed service is key to enhancing the dining experience
