Here at Polonza Bistro, we pride ourselves on creating a cozy atmosphere with homestyle comfort foods, expertly crafted coffee, and delicious cocktails. Polonza Bistro was the inception of Judy Ring, established in her hometown of Pensacola, Florida in 2011. To create a space that embraces the history of Pensacola, Polonza earned its' name as a term the Spanish explorers gave Escambia Bay. We aim to enhance the sense of community not only among our staff, but our customers as well.
