Home of dedicated people, natural-source water and beautiful landscapes, this mexican town honors tradition and brings the legacy of raicilla back to life, with the unique touch of true craftsmanship. Through the cross-Cultural experience, from the east and the west, the crafting of vino mezcal emerged. Vino mezcal, by definition, is any distilled beverage derived from the agave species; and as agave botanics have a wide range of formulations, the same is true of vino mezcal. Documents circa the 1620s first mention raicilla amidst a discussion between tax collectors and producers in jalisco.The original argument stated that this ancestral drink was nothing liketequila, or mezcal, which were made from the local agave plants. To evade taxes, producers claimed, untruthfully, that it was made strictly from the roots of the plant and thus, the name raicilla, translates to mean "root / little root".Today, most raicilla is still made in the mountains of Jalisco, in much the same way as it was produced centuries ago.Raicilla, being the ‘mezcal of jalisco', is not confined to one variety of agave, but rather is more terroir-driven.
