Recipes of the Rockies was started in 2003 in Fruita, Colorado, with Barbara Avery's publication of the Mike the Headless Chicken Cookbook, the Official Mike the Headless Chicken Cookbook.Barbara Avery is a freelance food writer. Her articles have appeared in the Grand Junction Daily Sentinel and COX News Service affiliates including the Atlanta Journal Constitution. She is also the author of The Collective Chicken Cookbook - The Official Mike the Headless Chicken Cookbook. Her articles currently appear on the Denver Examiner web site as the One-Pot Meals Examiner.She can be seen as a guest chef on Supper Time Solutions where she shows you how to make a dinner for four for $10-$15, in 30 minutes or less. Although Barb is on only part of the month, there are great simple dinner ideas on all the time. Barbara is working on her next cookbook, Cooking with Polly; Culinary Adventures with a Boston Terrier, a whimsically illustrated cookbook for people who like to cook and the dogs who love them.
