Sourdough has a long history and originated thousands of years ago. The Egyptians discovered fermenting sourdough by coincidence when the remainder of a dough started fermenting in the warm environment. This is how they found the sour starter for preparation of a sourdough. Authentic Sourdough Bread, like the one hand-crafted at our Calgary Bakery, Rustic Sourdough does not taste sour at all. We are using the same sour for many years, refreshed daily. The "so called" sourdough breads and buns at most bigger chain stores or restaurants are often regular wheat breads with the addition of chemicals, sometimes even vinegar to imitate a "sour" note. This has absolutely nothing to do with a sourdough bread like ours. Our bakers are mostly from Europe and have years of experience in the trade of artisan sourdough production. We do not use any industrial bread mixes and we scale, round and shape all our breads by hand.
