Food Production - Traversetolo, Emilia-Romagna, Italy
Our production is special: starting from the origin the meat has different qualities due to the type of outdoor breeding and the ancient processing by hand using only salt and a long seasoning. Our black pigs belong to an ancient local breed that had once almost completely disappeared. They are left free to roam the fields and woods in sun, rain or wind. The animals feed on fresh grass, corn, barley and wheat as well as broad beans, berries, roots and acorns. On appointment we will accompany our guests to discover our ham production in Traversetolo (the woods where our black pig is outdoor reared in Rivalta where there is also the farm Agricola Rosa dell'Angelo in wich you can find the oldest Landini and Lamborghini tractors collection) and the culatello production in Busseto. At the end you can have a taste of our products at the Prosciutto Bar. It is a space where our guests can have a lunch and buy our selection of cold cuts and cheese. The bread, fresh every day, is produced with antique wheat varieties. It is possible to buy our whole and sliced products, knives, wooden cutting boards and books. A corner is dedicated to Berkel cutting machines.
