Hello, I am Noah Matthies the founder of Salis. 15 years ago I fell in love with the food and hospitality business starting in a bakery, later working in kitchens and bars and now I live for 8 years in Cartagena, Colombia. In the last years, I traveled through most of Latin America and especially Colombia, studying its rich gastronomic variety and was enchanted to get to know so many recipes which long traditions and unique ingredients. With my team of bartenders where I'm currently working, we are experimenting for years using the huge variety of ingredients that the Colombian nature gifted to us. In these times of COVID-19 we came together to realize something which was a dream since years ago: share local ingredients with the rest of the world showing the Colombian flavors.WORM SALT / SAL DE GUSANO:Our Mojojoy worm salt is prepared of sea salt from Galerazamba and a house mix of selected chilis which are artisanally dehydrated and toasted by us - the best worms are picked one by one and fire-roasted and dried - later all the ingredients are ground together to combine this unique natural flavors.CHILIS:Our chilis com from farms of friends and farmers from all over Colombia. We select the fresh chilis for you to dehydrate them artisanally in shade by our selves so they would preserve all their flavor. Later they are ground by hand to guarantee the highest quality for a unique experience.ANT SALT:Our Atta Ant salt (sal de Hormiga Culona) is prepared of sea salt from Galerazamba and a house mix of selected chilis which are artisanally dehydrated and toasted by us - the ants are harvested by Don Leopoldo an expert with years of experience and shipped to us fresh just one day after they are fire-roasted - we dry them and later all the ingredients are ground together to combine this unique natural flavors.
