It all started when one of the loves of my life (my bonus son) came to live full time with us and he has celiacs. With Celiacs, everything has to be strictly gluten free which means, we had to learn how to cook and it had to be good enough for the kids to like it and with ingredients that are hard to cook with. Prior to this, my family was lucky if we followed the directions on the box right! After a lot of trial and error, we realized we actually loved cooking. And what made me sad is there are only a handful of places, he can safely eat without worry other than our kitchen. We thought about opening a restaurant but the hours with a family just did not make sense. Fast forward to a doctor's visit where I was struggling in my battle with Hypoglycemia and IBS as a result of Pelvic Congestion Disorder. I was told to try the Keto diet by a doctor. After a great deal of research, I started my journey. This actually made it a great deal easier to find ideas that were gluten free. My entire family started to eat Keto so we wanted to be sure it was the healthiest form of Keto. We ate almost all our allotted carbs in vegetables. Fat was not a goal but protein was. We also all take multi-vitamins. Keto works for our family and it could work for yours. So many people have joined the Keto "bandwagon" but we see them doing it in the most dangerous way. First people will eat more fat than needed or too much protein and no vegetables. Also we will see people eat Keto for a few days and then stop. This is TERRIBLE for you and your metabolism. Most people's excuse is that it is too cumbersome to cook every day. Well that is when we knew, we should take our love of cooking, Brinley's experience with Keto, and the need for others to have an easier way to eat better. Our food is kid approved, healthy and easy for all that life throws at you.
