Spiedo Restaurant & Bar opening August 2011, Level 6 Westfield Sydney CBD. Alessandro Pavoni & Fulvio Lancione will offer regional dishes from Lombardy. These will include the '"Spiedo Bresciano"" Pork ribs, Chicken, Quail and Rabbit, slow cooked for 5 hours in a Sage Butter baste and handmade pasta from the region. A '"deli" area will offer variations from the menu for those pushed for time or just wanting a lighter dish. The bar will offer draught beer, cocktails and a comprehensive wine list, complete with a bunch of Northern Italian greats.
