Grapes such as Monastrell, Garnacha Tintorera, Albariño or Verdejo are present alongside better known Tempranillo or Cabernet Merlot blends from celebrated D.O.s (Spain's Appellations or Denominations of Origin).With Spain's hot, dry climate and Mediterranean breezes, the vines are very healthy and require minimum treatment. Many of the wineries are organic, use neither herbicides or pesticides on the vines, and use gravity as opposed to pumping in the wine production itself. Nearly all the grapes are hand-picked in small cases to prevent squashing and resultant fermentation occurring before the grapes reach the press.
