The Balleau group is owned by brothers Will and Mick Balleau. The boys are originally from Albuquerque, New Mexico, but their mother is originally from Brisbane.Chingón was their first venture together, followed by Le Bon Ton and then Longhorn. Will has an extensive background in hospitality both in Brisbane and Melbourne, while Mick's skills lie more in building and construction. All three venues were conceived, designed and built by the brothers themselves. Each venue reflects a style of cuisine the brothers grew up with at home: the Mexican influenced food of their childhood, the classic Barbecue of the American South, all the way to the steakhouses of New York, where they spent time in their teens.Chingon Cantina y TaqueriaOpened in 2011, this "Cantina y Taqueria" is an homage to the simple but delicious street foods of Mexico. The food offering is small but packed with flavour. A great range of Tequila and cocktails plus Mexican beers and an awesome little rooftop terrace.Le Bon TonA Melbourne favourite opened in February of 2014, Le Bon Ton took its inspiration from the grand old "coffee-houses" of late 19th century New Orleans. Its name is a shortened Creole slang version of the catch phrase "Laissez le bons temps rouler!" – Let the good times roll! Le Bon Ton's menu showcases cuisine from multiple regions in the American South, with a specialty of Texan-style Barbecue. Beverage specialties include Southern inspired original cocktails and Absinthe service.Longhorn SaloonOpened in April of 2015, the current Longhorn Saloon is a merging of what was originally two venues within one. Hints of the New York style deli can still be found scattered throughout the menu.Named after the first bar the boys snuck into, Longhorn Saloon has a slightly more sophisticated and individually plated take on American cuisine, with a focus on fantastic steaks, all on our custom builtopen wood-fire grill. Soon to be Melbourne's newest Live Music Venue.
