We're serving beans to let our guests explore its untold potential.For over 10.000 years, beans are the staple food cultivated by humans – every civilisation has its own species of bean. There's a huge variety of size, colour, shape, and taste. The Bean Canteen shows the diversity of beans and puts ‘the poor man's meat' into the spotlight. Besides the great variety, beans do also have many other valuable characteristics. Beans convert nitrogen from the air and give it back to the soil in a form that can be used by plants and they don't need much water to grow – as a drought tolerant crop. Also, beans and pulses provide us with B vitamins and a lot of protein and fibre.We think beans are undervalued and we believe in its untold potential. Therefore, every recipe in our restaurant will be built upon at least one type of beans. The bean is the queen and we will honor her in all our dishes. In this way, we support a plant protein future where animal-based proteins become luxury products again.A bold life for the humble bean.
