We began with the notion of using single origin, transparent ingredients of the highest quality. We chose the corn that our Ute friends grow near Four Corners in southwestern Colorado. This corn is treated in an ancestral way by boiling and steeping the corn overnight with lime and then stone-grinding to make fresh masa for tortillas. Some of the tortillas we cut and fry using Colorado Mills high-oleic sunflower oil at low temps.
