The Tradition of working by hand Our company was founded in 1952 in Montecatini Terme, a small town not far from Florence, with the name of " Caffè Maraviglia", a historical and well known company in Tuscany, especially for its manufacturing methods. As in the 50 years ago, we have preserved the tradition of the " WOOD COFFEE ROASTING" method. In technical terms the substantial difference between these two production methods (gas and wood roasting) is the end result. In wood roasting the process needs to be followed step by step. All the different phases are implemented manually, roasting times are approx 20 minutes (depending on the selection of coffee bean) and the wood has direct contact with the coffee which adds an incredible aroma and benefit to the end result. The selection of the wood used is also an extremely important step. We use only oak wood for our coffee roasting. This requires an increase in time and energy consumed, hence higher production costs, however this undoubtedly allows us to have a product of excellent quality. More modern technologies like roasting with gas substitutes personal labor with machinery, roasting times are significantly reduced, approx 7/8 minutes and therefore production costs can be lower.
