In our food laboratory in the heart of Basilicata, we tested and perfected new cryogenic techniques also using a blasting chillers which preserve product quality. Totem Food uses IQF process (Individually Quickly Frozen) which extends the shelf life product like mozzarella, burrata and stracciatella which are subjected to expire quickly.
