Our small-scale stone mills turn healthful, distinctive whole foods like grains, pulses and spices into luscious flours, meals and powders. They empower each consumer, baker, pastry or savory chef to become their own miller, letting them get the very most flavor and nutrition, through freshness, for the foods they are preparing. This is enabling a departure from dependence on the huge monocrops that dominate our agrigultural production, squeezing out small farms and limiting biodiversity. For example, pastry chefs are asking, "why are we using wheat to make pastries? It's counter-productive! Let's start using other crops that are better suited for pastry-making and tastier, too!"But there's more! This empowerment extends to the entire food system! With end-users able to make immediate use of distinctive whole foods, sustainably produced, non-commodity farm products are being increasingly sought and used. In parts of the world that are overly-dependent on imported commodities, locally-produced foods can immediately replace a good fraction of the agricultural products now coming from richer countries. Our small-scale stone mills are making food-systems solutions possible that have been worked on for decades. This offers promise in the field of correcting the damage that current methods of food production are doing to our ecosystem. Finally, the awareness created by the ability to make one's own whole-grain flours, just-in-time, is driving greater interest in the effect of what our over-consumption of refined grains has had on our health. As now consumers and food scientists, soon health care professionals, and ultimately policy makers recognize that grains, from which we derive more than 70% of our calories, are best consumed in their natural entirety, and best milled just-in-time, there will be a recovery from the devastating epidemics of diabetes, obesity, heart disease, and other non-communicable diseases.
