Yoli Tortilleria is dedicated to provide quality tortillas in the Midwest utilizing midwestern non gmo and organic corn. Our tortillas are crafted utilizing the ancient method of Nixtamalization. The corn is cooked in water with food grade lime and allowed to soak ultimately softening the corn while creating an incredible aroma in process. After rinsing the cooked corn, it is stone ground using hand carved volcanic stones creating a soft and finely ground masa. This masa is then run through our tortilla oven and the result is a superb quality tortilla with flavors bursting from the past.
