Zia Green Chile Company brings the authentic cuisine of New Mexico, the Land of Enchantment, to New York City. New Mexican cuisine is far different from that of 'Mexican' or 'Tex-Mex' due to the state's rich terrain and climate which allows the defining ingredients to exist. You can't get very far in the state of New Mexico without being asked 'red, green, or Christmas?', in reference to ones preference of green, red, or a combination of the two region-specific colored chiles. At Zia Green Chile Company, we obtain all of our chiles directly from Hatch Valley, New Mexico, famous for the soil known to give Hatch chiles their unique and flame-roasted flavor. Our ingredients are authentic, and our recipes stick true to the traditional New Mexican cuisine we know and love. We grew up with the smell of freshly roasted green chiles and comforting taste of homemade New Mexican dishes and desserts straight from a Santa Fe kitchen, and now we'd love to share it with you.
