Their philosophy is "Ingredient Led, Flavour Driven, Fat Fuelled, Meat Obsessed." Ingredients are sourced from the best areas of the Uk – fish from Cornwall; lamb, beef, ducks, vegetables and eggs from Wales; pork from the Midlands and prawns from the Isle of Skye. They also collect and preserve wild ingredients from the surrounding Dyfi Valley such as wood sorrel, wild garlic, elder and samphire.The dining room holds just 7 tables, including a shared dining table and bench within the kitchen, and Ynyshir has 9 bedrooms.
