Bien Cuit is a James Beard-nominated, Brooklyn-based retail and wholesale bakery focusing on handcrafted bread and pastry. We are dedicated to the merging of classical and contemporary techniques that harness the benefits of fermentation, support the seasonality of local agriculture, and respect the centuries-old tradition of the bakery as the heart of the community. Support of regenerative agriculture is very important for us and we work closely with regional farmers and millers as often as possible. We've come to find that it is our employees that make our product what it is. From a desire to learn about technique in baking to the presentation of our product in the store to our administrative team who helps us build with continued structure and support, we have employees who consistently care deeply about our business, our philosophy and each other.
