Commercial kitchen grease exhaust system cleaning has slowly evolved from mechanical hand scraping and scrubbing to hot pressure washing and rinsing or a combination of both which is the most common service today. The only substantial changes in the last 30 years being the use of a hot water pressure washer, better chemicals and most recently duct spinner nozzles. All have helped kitchen exhaust cleaners do a better job at removing the flammable grease from exhaust systems reducing the risks of a catastrophic fire. But fires still happen. The issues are multi-fold. Poor system design that very often lacks the proper code required access, Shoddy construction violating critical clearances, apathy on the part of building owners, restaurant operators and even some inspectors, and of course the quality of cleaning services done by cleaning companies that are typically left alone after hours to finish their work. What needs to change to fix this system? What is needed is a major product innovation. A new way to do things, something that takes the old saying of "That's how we have always done it" and says "We now have a radical new technology that builds on proven and time-honored techniques and significantly provides a better service".This major product innovation has been evolving in Europe for a few years and has proven to be successful. It has arrived in California and is undergoing real world tests and is due for release to the industry very soon!
