Fancy Molasses: The pure juice of sugarcane, inverted into a syrup. Fancy molasses is the highest grade of molasses available. (Fancy molasses is not a by-product of the white sugar manufacturing process.) Crosby's Fancy Molasses is 100% natural and contains no additives or preservatives and is non-GMO. Fancy molasses is a bit lighter in colour than the other molasses products, and the flavour is tangy sweet. Blackstrap Molasses: A by-product of the white sugar manufacturing process blackstrap molasses is the nutrient-dense syrup that remains after sucrose has been extracted from the sugarcane juice during the sugar refining process. Blackstrap molasses is very dark with a robust, somewhat bitter flavour. Like the fancy molasses, it is a pure product and contains no added sulphates or sulphites.
