This designation means our oils have been lab tested as well as tasted by a panel of experts. If it means anything to the consumer, it should designate that the oils are "fresh"! We don't sell anything older than 16 months from harvest. Our balsamic vinegars start with a traditional thick base, then we add our own California fruit purees. Our wine vinegars are made by friends who run an organic farm near San Luis Obispo, CA.We continue to seek out the best products – depending on the harvest – we have the flexibility and integrity to source from multiple farms for the best flavor profiles. That means our products will change from year to year and sometimes even month to month. We are constantly tasting and evaluating oils and vinegars to bring you the best. We also produce our own tapenade, balsamic nuts, dips and sauces in house.We are in stores throughout the United States!
