We are committed to sourcing ingredients from farms and producers here in the Hudson Valley. That said, we do not limit ourselves by geography, only by quality. Our food is comforting and cosmopolitan. The sharing of ingredients and recipes across cultures has fed great cuisines throughout history. For years, we have nurtured strong relationships with local farmers so that we are first on the list in the spring when the strawberries ripen for strawberry-rhubarb pie, but we also line up in the fall for the new crop of Tuscan olive oil.Our commitment to local, sustainable foods is not only driven by our quest for great ingredients; it is also driven by what we think is best for the environment and our community. Our sense of social responsibility and environmental consciousness begins with support of local farms and extends to working with our neighbors and Hudson Valley non-profit organizations. We are members of Slow Food and Chef's Collaborative, and support the Cold Spring Farmer's Market. We also participate in the Culinary Institute of America's externship program.
