All aspects of canopy management are closely monitored to determine what has the greatest value and quality return. It is important to ensure all grapes arrive at the winery clean, ripe and packed full of flavor. For the first time in 2008 indigenous yeasts were engaged in fermentation.The aim is to produce the best wines possible without compromise, with the natural inclinations of the site and its vines making a principal contribution.
